The Delmanor Wynford Residents were treated to a delicious Italian dessert composed of berries and sabayon, a thick custard consisting of egg yolks, sugar, liquor and cream.
The custard is then whisked by hand over a double boiler so that the heat of the steam cooks the eggs without scrambling them. In this case, rose champagne was added to the egg yolk and sugar mixture until it held a soft peak. The cream is added at the end over an ice bath, along with lemon zest to bring out the boldness of the champagne. The end result is a rich, thick and creamy custard that pairs beautifully with champagne macerated berries.
